When I first shared my pea salad recipe in the summer of 2012, I shared a recipe that makes two servings. It’s perfect for everyday  family life. It doesn’t leave leftovers – yay!

But for holiday gatherings and crowd pleasing picnic or barbecue buffets, I need to scale the recipe up.

Since my pea salad tends to be a popular item on Pinterest around the holidays, I thought I’d share the scaled up quantities for the best pea salad ever.

Mr Picky and the Peas – Epic Battle

For five solid hours I tried to make my son eat peas. He was two. Epic parenting failure was inevitable, but I refused to give up. THIS is what happens when you have a strong willed momma with a strong willed child!

Go-Go earned the nickname “Mr Picky” during a now-epic battle over peas.

He wasn’t quite two.  And the battle left no doubt in my mind that he was the strongER willed of my two strong-willed boys.

You read that right – I am the proud momma of TWO strong willed boys.  They are 16 months apart.  And I love them.  I’m a proud surviver of the “two under two” club.

Pea Salad Recipe – Y’all This is Good Stuff!

I made some Pea Salad from all those hard boiled eggs I’ve been playing with.   If there is a dish that tastes like summer to me, this just might be it.

Y’all, I have a confession to make.  Under normal circumstances, I just can’t follow a recipe exactly as it’s written.  I just can’t!   But occassionally, I find something that is just too perfect to mess with.

Paula Dean’s pea salad is just that — perfect.  But I messed with it anyway.

We had ours with a lovely leftover grilled porkchop (almost as good as bacon).  Otherwise, I would be tempted to add about 1/2 a cup of crispy crumbled bacon to the dish.  But oooooohhhh… mmmm…. yum!  [Read more…]
