Creamy Curried Pumpkin Soup Recipe

I know, a curried pumpkin soup recipe wasn’t exactly part of my Grandmother’s holiday recipe collection either. But it should have been. Honest.

I’m hoping to make this a holiday family tradition for the next generation. After a huge holiday feast, I’m always in the mood for something light. For preference, something with lots of vegetable goodness. I also start craving spicy and exotic flavors.

In my mind, this curried pumpkin soup is just right as a post-Thanksgiving menu offering. It features peanut butter and coconut milk to round out the curry. Yummy. [Read more…]

Whole Grain Pumpkin Muffin Recipe

This whole grain pumpkin muffins recipe is fast, forgiving, and flexible.

Those are my three favorite words when it comes to baking.

(By the way, these have no eggs.  I’m told they pass the “vegan test” but you’ll have to judge for yourself.) [Read more…]

A Farewell to Summer – At least in my mind

In honor of Labor Day and the traditional end of summer, this week I’m bidding a (not so fond) farewell to summer.  After a week of back to school, I figure I might as well.

Maybe next week I’ll talk about apples.  No worries, I won’t suddenly share a week of apple crafts and decor ideas and recipes.  I’m still not that kind of a blog.  (I may make fun of a few… how fun would that me?  Hmmm…  I AM feeling a tad bit snarky…)

It’s still hot.  It’s hot AND humid.  It shouldn’t be legal for it to be over 95 degrees AND humid.  Walking outside feels like I’m hanging out in a sauna.  For those who live on the Gulf Coast, we know we have at least another month of this weather.  Maybe more.

Summer lingers long after it has worn out it’s welcome. [Read more…]

Back To School Treasury, Miscellany, Compendium…

Think of it as the back to school gallimaufry even.

Gallimaufry – (n) a confused jumble or medley of things

Why yes, in honor of back to school season I did use the thesaurus (or at least the website).  I certainly don’t walk around the house using the word gallimaufry.

Although to be honest, I think the word may be readily applied to several areas of the house including the play room and the laundry room.

But this… this is a round up of all the back to school fun I’ve written over the past two years. [Read more…]

Car line Revisited

A year ago, I wrote a rather fun piece titled the 10 commandments of car line.

I think it’s one of my favorite posts of all times.  It was initially drafted on the back of an envelope while I was sitting in car line.  Given that at the time I drove a black car and was sitting in 100+ degree heat for over an hour, it was great therapy.

I should confess that I discovered Candy Crush several days later and spent the rest of the school year happily advancing levels while waiting in car line.

I must not be alone.

On Monday, The Orlando Sentinel featured an article titled SCHOOL CAR LINES DRIVE MANY PARENTS CRAZY, IT SEEMS.

I was quoted in the article.  Squeee.  I haven’t read all the links… yet.

I figured it was time to revisit the car line. [Read more…]

Happy First Day of School to Me!

It’s the first day of school for my family.

I remember the first few years that the house would empty for the first day of school.  The first year or two, it was a shock.  I honestly struggled to figure out what to DO with myself.

The very first year I had both kids in preschool, drop off was at 9am.  By 10:30 I had gotten a much needed haircut and finished grocery shopping in peace.  The groceries were put away, dinner was in the crockpot.  I felt so…. lost.

Last year, I wrote a snark laden post on what to do for the first day of school.  In honesty, it was directed at my own former self.

10 ideas for how to enjoy back to school with thishappymom.com

At the very end of the post, I said

The first day of school should be yours to enjoy.

I meant it.   [Read more…]

Back To School Traditions

Today is the kick off of my back to school traditions for our family.

Don’t worry if your own back to school count-down hasn’t reached single digits yet, I promise… your time will come.   Honest.

Until then, you can spend every possible minute trolling Pinterest for the best back to school ideas you can find and live vicariously through the rest of us.

Me?  I have something planned for every single day between now and the start of school.

Because I’m the mom and I can do that.

First things first [Read more…]

I’m (not) a bad apple and I’m making applesauce.

When life gives you bad apples, make applesauce.

I’m not really a bad apple, but after yesterday’s post on cussing I’m feeling a little feisty.  I also wanted to post something safe and non-controversial.

Mr Picky likes applesauce almost as much as he hates peas.  He loves the GoGo SqueeZ Applesauce
variety and thinks they are named for him.  And I buy plenty of those.  (affiliate link on the applesauce, not a bad price on them)

When I find apples in the bargain bin (or when I buy bad apples), I make my own.
