10 reasons this is the perfect brownie recipe

These are my momma’s brownies. Don’t MESS with momma’s brownies.

Seriously.

I think I could make these with my eyes closed. They are the perfect brownie recipe.

Why are they perfect? Let me count the ways.

1.  They only make an 8×8 pan.  By the time my family finishes with them, there’s not enough left for me to feel guilty about.

2.  They are CHEAP to make.  They use cocoa powder for all their chocolaty goodness.

3.  They are flexible.  I’ve swapped whole wheat flour for the regular.  I’ve used ground up oatmeal for part of the flour.  I’ve used apple sauce or pumpkin for the oil.  I’ve reduced the fat.  I’ve added a generous splash of liquor.  I normally use olive oil (the cheap kind) when I bake these, but they would work with whatever you prefer.  I’ve even swapped tofu for the egg.  Nothing seems to mess these suckers up.

4.  They have the perfect texture.  Slightly gooey in the center of the pan with a crisp flakey crust and firm brownies around the edges.

5.  They can be made in a single bowl.  I’ve even been known to make them in the pan on a really lazy day.

6.  They can be turned into a pre-made mix.  Dump all the dry ingredients into a zip lock and label.  When you make them, just dump in the oil, eggs, and vanilla before mixing like normal.

7.   They are delicious.

8.  As a little girl, I learned to count to five as my mom measured the cocoa powder.  It’s the first job I remember in the kitchen.

9.  They are yummy without anything added, but they are also amazing if you add chocolate chips, nuts, or whatever else strikes my fancy.

10.  They are just like my momma always made.

I hesitate to share these.

When I shared this recipe on a recipe sharing website a few years back, chefs from across the world started messing with it.

They decided to complicate the recipe by using the creaming method (makes the brownies taller) or chilling the dough for several hours (makes them denser). In each case, the chef wrote to explain how they had “fixed” the problem in the original recipe. In many cases, they were trying to make the results more like chocolate cake. It wouldn’t have upset me so much except that they kept “correcting” the original recipe to turn it into chocolate cake.

The whole point of this recipe is that it is so simple. If you want to mess with it and change things up, go ahead. But you might also try trusting what’s here. It really will work without fancy cooking school methods. I believe this is the perfect brownie recipe.

Simple 1 bowl brownies like your grandma used to make.
Ingredients
  • ¾ cup flour
  • 1 cup sugar
  • 5 tablespoons cocoa powder (almost a ⅓ of a cup)
  • ½ teaspoon salt (you can leave this out if you need to)
  • ½ cup vegetable oil (increase to ¾ cup if you want gooey-er brownies)
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ cup chopped nuts
Instructions
  1. Put everything in the bowl at one time.
  2. Stir it with a big spoon until it's all mixed up (further stirring will make them less grainy and a bit taller).
  3. Place in an ungreased 8x8 pan (there isn't quite enough dough for a 9x9).
  4. Bake 20-25 minutes at 350 for gooey underdone brownies. Bake 25-30 minutes if you like them a little more "done."
