Whole Grain Pumpkin Muffin Recipe

This whole grain pumpkin muffins recipe is fast, forgiving, and flexible.

Those are my three favorite words when it comes to baking.

(By the way, these have no eggs.  I’m told they pass the “vegan test” but you’ll have to judge for yourself.)

Seriously, I have a hard time following a recipe.  I’ll get partway through and decide to double the spice, add some nuts, or swap out some of the fat for applesauce.  Since I rarely check to make sure I have all the ingredients a recipe calls for, I’ve also been known to make some desperation swaps as well.

I know the recipe is for pumpkin muffins.  Trust me.  You can used leftover mashed sweet potatoes or whipped carrots too.  I know first hand that they will all work.

I tend to use olive oil when I make these, but it works just fine with real butter.

I don’t normally add the pumpkin seeds on the top.  My kids don’t like the crunchy they add.   Without the nuts, these don’t last around my kids.  They gobble them up like they were junk food.

Yes, I’ve made them with GF flour (Pam’s if I recall). They were a little more dense, but it did work.  I’m sure an experienced GF baker could figure out how to fix it.

About the only thing I haven’t done is try removing the remaining 1/4 cup of oil or reducing the sugar.  These are so perfect for my family that I hate to mess with them.  (If you do, I’d love to know how it works for you.  I’m open to change.)

By the way, these are amazing with some Pumkin Spice Coffee or a Chai Latte.  Just in case you need motivation.

Low fat, whole grain, no eggs, loaded with vegetable goodness. These are the perfect muffins for fall.
Ingredients
  • ¼ cup butter or butter blend or margarine
  • 1 cup brown sugar
  • 1 tsp vanilla
  • ½ cup unsweetened apple sauce
  • 2 cups pumpkin puree (canned or fresh)
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • Pinch salt
  • 2 ½ cups whole wheat flour
  • 2 tsp baking soda
Instructions
  1. Cream butter, vanilla, and brown sugar.
  2. Add applesauce, pumpkin, salt, and spices. Stir to combine.
  3. Add flour and baking soda and mix well.
  4. Pour batter into cupcake pan. These are pretty dense muffins, so fill at least ¾ full (that means they don't rise very much, but it's ok)
  5. Bake at 350 for 20-25 minutes.

  8. After reading your recipe on Whole Grain Pumpkin muffins, I am going to try them. I love to eat but I have a tendency to eat the wrong foods. Do you have advice on how to handle food cravings?

    • If I did, I probably wouldn’t need to spend an hour in the gym every day. 🙂 I tend to do best when I drink a glass of water and do the apple test. If an apple sounds good, I’m hungry and need to eat something. That’s normally one bite of craving and ten bites of healthy (repeat until full). If an apple doesn’t sound good, I’m not hungry. I drink another glass of water and get busy cleaning house.
