Grilled Pineapple Salsa Recipe

I love this grilled pineapple salsa recipe.  It’s one of our favorite summer treats when we’re grilling.  It works surprisingly well for anything from tacos to Thai food.

It takes about five minutes from package to table if you start with pre-cut pineapple spears (or circles) from the grocery store.  I love dishes that are amazingly simple to prepare but impressive enough for company.

Grilled Pineapple Salsa Recipe:

First, get your hands on some fresh pineapple spears.  I normally buy them pre-cut from the grocery store.

 Sprinkle them with a tiny bit of salt and then toss them on a hot grill.

Grill for about two minutes a side, just long enough to get some grill marks.

Next, you cut the pineapple into salsa sized chunks and dress with cilantro, lime juice, and green onion.

Then, you eat it!  This is made with some corn tortillas, pulled pork, shredded red cabbage, crumbled Mexican cheese, and (of course) grilled pineapple salsa.

It’s a party in your mouth.

Grilled Pineapple Salsa

Perfect addition to grilled chicken or fish. Equally at home with Mexican or Thai foods.
Ingredients
  • Pineapple wedges (buy the whole pineapple, or just cheat and buy it pre-cleaned)
  • Kosher Salt
  • ½ cup fresh cilantro, cleaned, stemmed, and chopped
  • 2-4 stalks green onions, chopped
  • juice of 1 lime
Instructions
  1. Sprinkle the pineapple with a pinch of salt.
  2. Place it on a hot grill and grill each side for 1-2 minutes, just until the sugars start to caramelize.
  3. Remove from grill and allow to cool slightly (just enough to not burn your fingers). Chop into bite sized pieces.
  4. Toss pineapple with cilantro and green onions.
  5. Then squeeze the lime juice on the salad.
  6. If you time it right, the pineapple will still be hot on the inside.
  7. Combined with the cool cilantro, it really pops.
