Summer Salad Round Up

It’s the last weekend of summer, traditionally the time for the last bar-b-que of the season, so I’m rounding up all my summer salad recipes for your convenience.

My weekend plans are super fun!

I’m driving out to the country to pick up our share of a cow from the meat processing plant.  I’ve never done this before, so it should be an adventure.

Summer Salads:

food blogger shot of slicing corn off the cobYummy Corn, Tomato and Basil Salad is great to take on the go.  Make it with still-frozen corn to keep things fresh.

Watermelon Salad is a nice one to make if you need an easy dish that looks all fancy and foo foo.

If you want something with hardboiled eggs, you can go for pea salad.  This would be an eggs-ellent vegetarian option if you need one.

A nice lentil salad would be another vegetarian friendly option.  pea salad y'all. it's good eats

If you’re looking for a carnivore option, grill up some bistro chicken and add it to a pasta salad.  Or just eat it.

End of the summer tomatoes deserve to be celebrated.  You can pop them in a simple salad with mozzarella and basil.

Or you can pop them in a salad with some goat cheese instead (that recipe was in my newsletter, did you miss it?)

 I’m craving some potato and green bean salad with basic vinaigrette.

If you’re on a budget, I’d suggest making some basic beans in the crockpot.  After they cool, drain 2 cups of beans.  Combine with 1 can of tomatoes and chiles (the cilantro flavored one is really mild) and one can of drained corn.  It makes a huge amount of salad to take to a party.  We call it Texas Caviar.   You can use the rest of the beans to make this beautiful tropical rice and beans dish later in the week.
