Marinated Onions – Recipe

This picture of Marinated Onions was the very first food photo I ever got a complement on.

I still love the photo.  Even more, I love those onions.

I crave these, and I should definately make them more often!

The onions are marinated, so they lose all their raw qualities.   Since I don’t like raw onions, that makes them perfect for me.

Making these couldn’t be simpler or more frugal.

To make your own marinated onions:

Thinly slice a red onion. Put it in a plastic container. Add about 1/4 cup of balsamic vinegar, 2 good squirts of honey, and 1 teaspoon of dried thyme. Put it in the fridge overnight.

(if you are in a hurry, just shake it every chance you get to speed up the “pickling” process)

That’s it.

I love this on roast beef sandwiches and on grilled veggie and goat cheese sandwiches.  (The roast beef part is optional, trust me).

It is fabulous in a salad with blue cheese and some leftover steak.

When I’m down to the tiny bits and a bunch of liquid, I use it in a basic vinaigrette dressing for a salad, or as a marinade for meat.

Perfect topping for salads and sandwiches.
Ingredients
  • 1 red onion
  • ¼ cup balamic vinegar
