Brown Sugar Apple Pie Granola – Recipe

I’m working on back-to-school menus this week, and one of the items on my list is “whole grain snacks.”   That’a pretty big category that includes granola, muffins, and some cookies.  I want to give my kids something sweet, but I want it to be low sugar with fiber, protein, and fat.

This is a great basic granola that I use as a snack when mixed with a few chocolate chips, lots of raisins, and a handful of nuts.  It works for a kid snack, but I also use it as a grab-and-go snack to eat in the carpool line.

My favorite way to use this granola is with yogurt and fresh fruit.  I haven’t been able to make my own yogurt since before the remodel, but believe me… it’s on my list once school starts.  Until then, I’ll live with the store-bought stuff.

How to make brown sugar apple pie granola.

Nothing earth shattering.  Just old fashioned oatmeal, coconut, brown sugar, honey, butter, vanilla, and spices.  I used an apple pie blend of cinnamon, nutmeg, cloves, and ginger.  You could use plain old cinnamon, but then it’s not apple pie flavored.

Combine 1/2 a stick of butter, 2 tablespoons of honey…

… 1 tablespoon of apple pie spice (or cinnamon) …
…1/3  a cup of brown sugar…

… and 1 teaspoon of vanilla in a microwave safe container. 

Microwave until it starts to bubble.  Be careful, bubbling sugar is VERY hot and will make a nasty burn if you spill this.   I did have a really cool photo of the bubbling sugar lava, but when I looked closely, I realized I needed to clean my microwave.  Dirty microwaves are NOT good eats.

Then, combine about 3 cups of old fashioned oatmeal with 1 cup of coconut in a large shallow baking pan.

Combine that (I used my clean hands) and then drizzle the melted butter/sugar on top. 

Mix it together (I started with the spatula, but gave up and used my fingers).

Sprinkle 1/3 cup more of brown sugar on the top.  This is wonderful, because it gave some variation in flavor to the granola (some bites were sweeter than others).  Yum! 

Bake at 250 for about an hour.  You need to stir it gently every 20 minutes or so.  Burned granola doesn’t taste very good. 

If you object to the coconut, you could certainly leave it out.  You can mix up several different flavors of granola in individual servings by adding in various nuts, dried fruits, and candy pieces after the granola has cooked.  Its a great way to clean out the odds and ends in the pantry.  To make it really authentic apple pie flavor, add some dried apple bits.

  • 3 cups Oatmeal
  • ½ stick Butter (same as ¼ a cup)
  • ⅓ cup Brown Sugar + ⅓ cup Brown Sugar
  • 2 tablespoons Honey
  • 1 tablespoon Apple Pie Spice (or Cinnamon)
  • 1 teaspoon Vanilla
  • 1 cup Coconut
  1. Combine the brown sugar, butter, honey, spices and vanilla in a small microwave safe bowl.
  2. Microwave to melt.
  3. Combine the oatmeal and coconut in a big flat oven-safe dish.
  4. Pour the melted sugar/butter on the oatmeal.
  5. Combine.
  6. Sprinkle ⅓ cup more brown sugar on top of the oats.
  7. Bake at 250 for an hour, stirring every 20 minutes.
  8. Remove from oven.

  1. I tried this with almond butter instead of butter and just honey and it also still worked out super yummy!
