Summer Salad Menu Edition – Menu Monday

menu monday with thishappymom.comIt’s time once again for Menu Monday, the Summer Salad Menu edition. Today I’m sharing a week’s worth of main-dish salad ideas.  It’s hot, I don’t want to cook, and salads sound very appealing.

My plan is to have some days where I prep all our meals first thing in the morning, stash them in the refrigerator, and then serve them at the appropriate time.   Combined with our usual assortment of finger food lunches (grilled chicken, fresh fruit, triscuits, raw vegetables, and yogurt) this should be a pretty simple no-cook week.

These salads will appear at either lunch or dinner this week (or both).  I’m totally looking forward to a week of cool, crisp, vegetable salad goodness.  Yum.

Summer Salad Menu

  • Green Bean Potato Salad with Tuna
  • Lentil Salad and Wilted Spinach (posting the recipe this week, but I’m including a photo just to tease you)
  • Caprise Salad (tomatoes, basil, and mozzarella) with crispy bread and leftover grilled chicken
  • Potato Cobb Salad from Southern Living
  • Chicken Salad (this week, mine is using canned chicken and has celery and apples in it)
  • Avocado Egg Salad (again!  3 hardboiled eggs + 1 small pouch wholly guacamole = lunch)

Shopping List for a week of summer salad meals

  • 4 pounds potatoes
  • 1/2 pound fresh green beans
  • 8 cups mixed salad greens
  • 2 large avocados
  • 1 large package fresh spinach
  • 2 onions
  • 1 bulb garlic
  • fresh basil
  • celery
  • 6 big tomatoes
  • wholly guacamole individual package
  • 1 apple
  • green onions
  • 2 lemons
  • 2 cups (8 ounces) shredded sharp Cheddar cheese
  • 4 ounces crumbled blue cheese
  • small plain greek yogurt for chicken salad
  • fresh mozzarella
  • 3 eggs
  • 1/2 package bacon
  • 1 large pouch tuna
  • 1 large can white meat chicken
  • 1/2 bag brown lentils
  • salt and pepper
  • olive oil
  • balsamic vinegar
  • fresh crusty bread
