Watermelon Salad Recipe

If you haven’t finalized your menu for July 4th, this watermelon salad recipe could fit into your plans. It’s quick, cool, and easy. It looks really fancy if you’re trying to impress people, and it just plain tastes good too. Between the cool crisp watermelon and the minty freshness, it really perks me up on a sweltering summer day.  It works well with a barbque, but it also is a great low calorie snack.

This is two cups of cubed watermelon topped with about twenty mint leaves that were cut into tiny ribbons.  Then I drizzled a bit of balsamic syrup on top of the cubes of watermelon.  The syrup gets absorbed into the watermelon.  mmmm!

ps – I think it works just as well with basil… and feta cheese.
