Corn Tomato Basil Salad – Recipe

Corn tomato basil salad has to be one of my favorite salads to take to a potluck picnic.

I can make it in less than five minutes, it tastes great with grilled foods, it’s refreshing, and it looks pretty on my plate.

To be all fancy about it, you can grill ears of corn and then cut the kernels off the ears and make the salad. That’s what I did in this photo.

But you can also use a bag of FROZEN CORN to make the salad.

I like using frozen corn straight from the freezer if I am taking the salad outside or putting it in a cooler. It stays cold for several hours that way.

I also like it because it simplifies my life and speeds up cooking.

Still, when you slice kernels off the ear of corn it makes for a cool presentation.  Maybe I’ll slice ONE ear of corn up and kind of fake the rest.  Think anyone will notice?  Either way, this salad is showing up on my July 4th menu.

When we were without power after hurricane Ike, we had a block party picnic one afternoon (clearing out the bounty of our collective freezers).

I brought the corn tomato basil salad made with a bag of corn from the freezer and it was so perfect!   For that occasion, the salad was heavy on corn and basil (from my garden) and pretty light on tomatoes.

It still tasted good.

That and the bucket of frozen margarita slush were the two biggest hits of the day.  This salad belongs on your emergency hurricane prep list if you have basil in the garden!


Corn Tomato Basil Salad - Recipe
Recipe type: salad
Cuisine: American
Simple to assemble, perfect for picnics.
  • Corn (about 4 ears of fresh or a small bag of frozen)
  • Tomatoes (about a cup, cut into bite sized pieces)
  • Fresh Basil (a big bunch, cut into little strips that you won't mind eating -- about ¼ to ½ cup of strips)
  • Olive Oil (2 tablespoons more or less)
  • Balsamic Vinegar (good) or Balsamic Syrup (very good)
  • Kosher Salt (a pinch or two)
  • Black Pepper (about 5 grinds on my pepper mill)
  1. Mix in a bowl. Chill. Serve.

Keeps a few days in the refrigerator before the basil goes manky.
